Using fresh and local products is an important part of Chef Bill Collins’ culinary philosophy and for this class he’s created a menu that draws from the best seasonal ingredients available. These easy, yet delicious dishes are perfect for a special summer supper.



  • Chilled Cucumber Soup with Smoked Salmon and Dill A snowy white, icy cold soup garnished with bits of smoked salmon and fresh dill.

  • Grilled Plum Chicken with Fresh Sautéed Plums Boneless chicken breasts glazed with Asian plum sauce served with sautéed plums

  • Haricots Verts Tossed with Lemon Butter

  • Sesame Rice Salad A rice and minced vegetable salad seasoned with a sesame dressing and garnished with toasted sesame seeds.

  • Ginger Creme Brulee Topped with Raspberries
